Started by the Sun Noodle company, Ramen Lab is sort of like an incubator and a showcase of a rotating cycle of highly talented ramen chefs. Anywhere else, the wait times would be prohibitively long, but the staff here is extremely efficient with orders. It's also a standing-room-only counter which encourages you not to linger for too long. Try and get a seat towards the front, where you can see the ramen being made.
Tiny little new place. Simple menu, very clean. I got the kale salad and spicy miso ramen. Not a huge fan of the salad, but ramen was very nice. Nondescript but decent noodles, but the broth delicious. Stephen had the mazemen with uni on top, which looked excellent also.
