That awesome time warp of a French restaurant, Le Veau d'Or, are businesses that would very likely be more profitable selling sneakers, tube socks or designer cupcakes. They hang on – in a particularly unfriendly economic climate.

Manganaro's Grosseria and that awesome time warp of a French restaurant, Le Veau d'Or, are businesses that would very likely be more profitable selling sneakers, tube socks or designer cupcakes.

Good luck. The places I'm thinking of just happen to be institutions. They just happen to be old. Newer, more pragmatic enterprises couldn't or wouldn't do what they're doing.

Peter Luger [the lauded steak house in Williamsburg]? Let me make this clear: "old" does not necessarily mean "good".

One of the three places in this map that has survived the brutal caprices of style and changing tastes. – and are still worth going out of your way to patronise.

I love all of Mario Batali's places — Lupa is probably my favorite of his. There are so many good Italian restaurants out there.

I love Cesare Casella's place Salumeria Rosi [Parmacotto] and that's much more causal.

For my favorite high end Italian restaurant, I like Marea.

Le Bernardin, for a fine-dining experience that's as good as it gets. I love Yakatori Totto. It's a super great, traditional low-impact place. I love Osteria Morini. Salumaria Rosi for casual Italian—a good bowl of pasta, good salumi.

Pastrami Queen would be one of the places I would hit for a perfect day in NYC. They deliver and they have good stuff.

The reason why I love this restaurant so much is that the fact that the menu serves no other meat but beef. If you are looking for a food adventure that stretches your beef eating experience, check out Takashi's.

Need I say more? I produced the TV show "Mind of a Chef" featuring Momofuku's chef David Chang.
